On the menu lately.


Quinoa pizza casserole- for dinner club Wednesday night. Going to condense the recipe a little, though. :)

Healthy Cobb Salad- with homemade balsamic. Delish lunches!

Pampered Chef chili bake- made this for Sunday dinner yesterday. I used ground turkey instead. So yummy for cold day!

Kale and Butternut Squash Soup- This isn't the exact recipe (as I made it up) but it was a delicious "clean out the fridge" meal. I would love an immersion blender as I think it would have been wonderful in a creamy version!

Stuffed Peppers- Friend is making for us tonight after we do homework and gym...can't wait!

Crockpot "roast" chicken- So delicious and made for great leftovers for wraps and salads. I added lemon and fresh rosemary, too!

  1. LOVE my immersion blender!! I've used it so much, that I burned it out and had to get a new one. You should register for one for your wedding, they have FUN colors, too. I use it for soups, baby food, salsas, drinks etc!!
