With bar prep in full swing, my slow cooker has become one of my bffs when it comes to meal time. Forreals. We even have a new one that's programmable. Amen.
My aunt and I were talking about a recipe she tried the other day, and I took a little spin on it to make something super easy. Let's just call it, "3 ingredient Italian beef yumminess".
Prep Time- 5 minutes
Cook time- 6 hours on low
1 package of stew beef/beef for stewing
1 bottle of zesty Italian (I use Good Seasons as I never buy bottled dressing anymore. yum)
1 can of Italian roasted diced tomatoes, undrained
Cut up the stew beef into smaller pieces
Put beef (uncooked) into slow cooker
Pour in Italian dressing and canned tomatoes
Stir all the ingredients together to coat beef well
Cook on low for 6 hours
It smells amaaazzzing all day. The beef is super tender and flavorful. The sauce is fresh and light. We put ours over egg noodles. Would be delish over rice, mashed potatoes...or spaghetti squash if you want to keep it perfectly paleo.
