Easy Thai Pumpkin Soup with massaged kale salad and homemade croutons
{We try to participate in "Meatless Monday" every week}

One pan Mexican quinoa with grilled chicken and taco toppings

Bunless Hawaiian burgers with sweet potato fries and spinach salad

Spaghetti squash with spinach, bacon, and feta cheese - I could make this every week!
{original recipe calls for goat cheese, but we aren't fans ;)}

Chicken, bacon and avocado paninis and salad
{use up leftover ingredients meal on Fridays!}

  1. Sounds delish! I make a pesto pasta w/ chicken sausage but never thought to add the brussels spouts.
